Suminomo
(Fresh
Pickled Cucumber Salad)
- 1/2
cup rice vinegar
- 6
Tbs. water
- 1/4
tsp. salt
- 1
1/2 Tbs. mild honey (or other sweetener)
- 1
medium cucumber, thinly sliced
- 1/4
small red onion, thinly sliced
Mix
the first 4 ingredients in a quart glass jar. Add cucumber
and onion. Push vegetables down into the dressing. Marinate
in the refrigerator overnight. For more variety, add a little
sliced dikon or other radishes, chopped parsley or fine
julienne of carrot.
This
recipe can easily be multiplied. Just make enough dressing
to cover any amount of vegetables. Enjoy!
