Fresh Fruit Cobbler
As I write this, I'm eating a delicious fruit cobbler. We have it often in the summer due to the abundance of fresh fruit. Most any fruit will do. We grow our own peaches and apricots, though apples, figs and plums also work well. Sometimes we add cherries or pineapple. Use whatever you have. This is a simple recipe and can successfully be modified to suit what you have available.

Toss the following together in a 9"x13" pan:

  • 16 cups sliced fruit (6 lbs.)
  • 2 tsp. lemon juice
  • Honey or maple syrup to taste
  • 1/4 Cup flour (or enough to soak up the fruit juices)

Combine the following in a food processor or blender:

  • 1 Cup almonds, chopped fine
  • 2/3 Cup oat bran
  • 2 Cups oats
  • 2 tsp. cinnamon
  • Cut in 2/3 cup butter

Melt together the following and pour on the above:

  • 1/2 cup honey or maple syrup
  • 1/4 cup fruit juice

Mix the above together and spread on top of the fruit. Cook at 375 degrees for 20 minutes. Let cool and enjoy.
