Ground flax tabouli

Ingredients
Cracked bulgur wheat
Fresh ground flaxseed
Water
Tomatoes
Olive oil
Onion
Parsley
Mint leaves

Preparation
Combine all the ingredients in a mixing bowl, cover and let stand in the refrigerator overnight

Serving suggestions
Serve over a bed of leafy greens or as a side dish. It goes well with humus, baba ganoush and other Middle Eastern dishes.

Commentary
Flax is a rich source of essential omega 3 and omega 6 fatty acids. Flaxseed has been used as a substitute for oil in baked products. The replacement ratio is 3 parts flax to replace 1 part oil. Remember, the longer flax is exposed to light, heat and air, the more the essential fatty acids are destroyed. 1/4 Cup of flax provides 6 grams of fiber, the equivalent of 1.5 cups of oatmeal.
