Chimichurri
Sauce
Ingredients
1/2 Cup Virgin Olive Oil
Juice of one lemon
1 Cup fresh parsley leaves, finely chopped
1/4 Cup fresh oregano leaves, finely chopped
1/4 Cup fresh cilantro, finely chopped
1 tsp dried thyme
6 cloves garlic, peeled and chopped coarsely
2 minced shallots or
1/2 brown onion, chopped coarsely.
1 red jalapeno, stemmed, seeded and chopped coarsely or
1/2 tsp ground red pepper.
1 Tsp salt
Preparation
Combine the ingredients in a blender or food processor and
chop but do not puree. Add the oil last. Use fresh or chill
in the refrigerator. Serves 6.
Commentary
This sauce is excellent on chicken, turkey, fish or red
meats. It is the Argentinean national condiment. The fresh
vegetables in this sauce are an excellent source of many
vitamins, minerals and flavenoids.
