Baked Yams with Almond Butter

Ingredients
Yams (not sweet potatoes)
Almond butter (preferably "raw")

Preparation
Pre-heat oven to 375 to 400 degrees. Scrub the yams, cutting off any brown spots and rinsing thoroughly. Place the yams on a baking sheet in the oven and set a timer for 1 hour. The yams will become soft and some of the sweet liquid will run out.
Serve the yams hot as a side dish with almond butter spread liberally over the top. The saltiness and crunch of the almond butter complements the sweetness and soft texture of the yams.

Commentary
Yams are a rich source of vitamin A. Almonds are source of monounsaturated fatty acids and minerals such as calcium.
